Description
Black winter truffles from Perugia in their own brine. These truffles are ‘hunted’ by dogs specially trained since they were puppies. They have replaced pigs as the pigs tended to eat their finds before they could be stopped. The precious underground fungus grows several centimetres below ground next to only a few specific types of tree such as ash, elm, maple, oak and walnut. Winter truffles can only be hunted when the temperature is hot enough to allow the odour of the fungus to permeate the soil. It takes many hours to collect a small bag full. The ultimate addition to many rice and pasta dishes.
