Description
Zibibbo is a white grape used for making sweet wines. Pacenzia or patience reflects how this wine is made. The grapes are picked at the very end of the long hot Sicilian summer and then partially fermented in the last of the summer sun before being pressed giving it the distinctive almost candied fruit taste. Zibibbo comes from the Arbabic word “Zabib’ which means dried grape. This wine has been made in the same way for hundreds of years.
